Method
- Preheat the oven to 400°F and grease a baking dish lightly.
- Pat the chicken dry and place it in the dish.
- Rub the chicken with olive oil, garlic, onion powder, paprika, cumin, salt, and pepper.
- Spoon salsa fresca over the chicken evenly.
- Bake uncovered for about 20 minutes.
- Add cheese on top and bake for 5 more minutes, or until the chicken reaches 165°F.
- Rest for a few minutes, then finish with lime juice, cilantro, and jalapeño if desired.
- Serve hot.
Notes
- Use chicken thighs for a juicier version.
- Fresh salsa gives the best flavor, but chunky store-bought salsa also works.
- Serve with rice, salad, or roasted vegetables.
