Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups salsa fresca or pico de gallo
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1 tablespoon lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 jalapeño sliced optional

Method
 

  1. Preheat the oven to 400°F and grease a baking dish lightly.
  2. Pat the chicken dry and place it in the dish.
  3. Rub the chicken with olive oil, garlic, onion powder, paprika, cumin, salt, and pepper.
  4. Spoon salsa fresca over the chicken evenly.
  5. Bake uncovered for about 20 minutes.
  6. Add cheese on top and bake for 5 more minutes, or until the chicken reaches 165°F.
  7. Rest for a few minutes, then finish with lime juice, cilantro, and jalapeño if desired.
  8. Serve hot.

Notes

  • Use chicken thighs for a juicier version.
  • Fresh salsa gives the best flavor, but chunky store-bought salsa also works.
  • Serve with rice, salad, or roasted vegetables.
