Ingredients
  

  • 4 chicken thighs or breasts
  • 1 cup rice
  • 1 cup cherry tomatoes
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Season chicken with salt, pepper, and herbs
  2. Sear in olive oil until golden, then remove
  3. Sauté garlic and toast rice
  4. Add broth, lemon juice, and zest
  5. Add tomatoes and place chicken on top
  6. Cover and cook until rice is tender
  7. Rest, garnish with parsley, and serve
