Ingredients
  

  • 2 chicken breasts
  • 1/2 cup black rice
  • 4 cups chicken broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 cup milk or 1/2 cup heavy cream
  • 1/4 cup parmesan cheese
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley

Method
 

  1. Add rice, chicken, vegetables, and broth to crockpot.
  2. Season and cook on low 6–7 hours or high 3–4 hours.
  3. Remove and shred chicken, then return to pot.
  4. Stir in milk and parmesan, cook 10 minutes more.
  5. Remove bay leaf, garnish, and serve.

Notes

  • Black rice gives a unique chewy texture and nutty flavor.
  • Add extra broth when reheating if soup thickens.
  • Best served warm with bread or salad.
