Ingredients
  

  • 4 chicken breasts
  • 1/2 cup basil pesto
  • 1 cup mozzarella cheese shredded or sliced
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes
  • Fresh basil for garnish
  • 2 tablespoons parmesan optional

Method
 

  1. Preheat oven to 400°F and grease a baking dish.
  2. Season chicken with oil, garlic, salt, pepper, and Italian seasoning.
  3. Spread pesto evenly over each piece.
  4. Add cherry tomatoes around the chicken.
  5. Bake for 20 minutes.
  6. Add mozzarella and bake 5 more minutes until melted.
  7. Rest, garnish, and serve.
